Homemade Granola Bars

I recently posted about these bars (that I literally whipped up and used leftover things I had in the pantry) and I am getting lots of requests for the recipe.  

From here on out, can we just assume I will never have an exact recipe?  All of my measurements are estimates.  I am not a measurer, and I hate being in the kitchen, so throwing ingredients in a bowl as quickly as possible is kinda my jam, kay?

These are very similar to "energy balls" but my son was looking for "a bar" ... sooooo, I changed the shape to avoid a tantrum #momwin

 

Ingredients:

  • Almond Butter- 1/4 cup (which is really just an overflowing spoonful if you're in a hurry)

  • Sun Butter- 1/4 cup

  • Oatmeal (dry)- 1 cup

  • Chia Seeds- 1/3 cup

  • Flax Seeds- 1/3 cup

  • Sunflower Seeds (raw/ unsalted)- 1/4 cup

  • Dairy-Free Dark Chocolate Chips- 1/3 cup

  • Unsweetened Coconut; 1/4 cup

  • Honey- 1/2 cup

  1. Dump everything into a bowl and allow the minions to help stir while you reach for the parchment paper.  

  2. Dump the mixture onto the paper, fold up and allow the minion to "hulk smash" to flatten it out.  

  3. You can cut them into bars or roll into balls.  

  4. Throw in the fridge and grab when you need somethin' sweet.

*note: you can use any type of nut butter and any addition nuts/ seeds that you'd like!
